Flavours
From Spalla to Capù, from Fécc to Creste, the flavours of the Val di Scalve are expressed at the table according to the oldest mountain traditions. Accompanied by polenta, game, mushrooms, and cheese; enriched by the taste of vegetables traditionally used in local recipes, the typical dishes of the valley become ambassadors of local flavour.
Herbs and vegetables, in particular turnips, cabbage and potatoes give the dishes a unique taste, because they grow in uncontaminated soil and are nourished by the valley’s pure water.
The cheeses deserve a separate chapter: the cows graze freely in the alpine pastures for most of the year, and their milk gives life to various types of cheese, all tasty and rich in valuable organoleptic properties.
